Shredded Chicken and Sweet Potato Hash with Kale

This is one of my favorite go-to recipes during busy weeks.  It’s quick and easy, and full of super foods!    It’s also a great way to utilize some of the shredded chicken that I made on food prep day.  I actually enjoy this either warm or cold, too.

Peel and dice 1 medium sweet potato, 1/2 and onion and wash and chop 3 cups of kale.  Saute the onion and sweet potato until the onion is translucent, then add the kale and heat through until wilted a bit.  Add the seasonings and chicken, and that’s it!

Ingredients
  • 2 tbsp olive oil
  • 1 medium sweet potato, peeled and diced
  • 1/2 a medium – large sweet onion
  • 3 cups of kale, rinsed and chopped
  • 2 cups shredded chicken
  • 1 tbsp Emeril’s Essence seasoning
Instructions
  1. Peel and dice sweet potato
  2. Peel and dice onion
  3. Saute sweet potato and onion in 2 tbsp olive oil
  4. When onion is translucent, add the kale and Emeril’s seasoning
  5. After a few minutes, the kale will start to wilt ~ mix in the shredded chicken and heat through.

Basil & Cottage Cheese Pesto

This is an easy and tasty way to add flavor to poultry, pasta or fish and has less fat than pestos made with lots of oil.  I love using this over salmon or with a whole grain pasta for a post-workout meal!

Basil & Cottage Cheese Pesto
Recipe Type: Sauce
This low-fat pesto is an amazing addition to pasta, fish or poultry!
Ingredients
  • 2 cloves garlic
  • 1/2 cup basil
  • 1 cup 2% cottage cheese
  • 1/4 tsp Kosher SaltJuice of 1/2 a lemon
  • 1 tbsp olive oil1/4 cup freshly grated parmesan cheeseCombine all ingredients in food processor or blender.
Instructions
  1. Combine all ingredients in food processor or blender.

Versatile Red Pepper Cream Sauce & Steamed Artichokes

Versatile Red Pepper Cream Sauce

This versatile sauce is great over pasta, grilled chicken and steamed veggies, or even as a dip for a steamed artichoke.
Ingredients
  • 1 red pepper, diced
  • 1 sweet onion, diced
  • 2 cloves roasted garlic1 cup 2 % cottage cheese
  • 1/4 tsp kosher salt
  • Olive Oil Cooking Spray
Instructions
  1. In a non-stick skillet and over medium heat, sauté the diced onion and diced red pepper in cooking spray.
  2. Add the salt.
  3. When the onion is translucent, let it cool and place in blending machine.
  4. Add cottage cheese and roasted garlic to the onion mixture and blend until smooth.
